For a taste of how broadly Japanese green tea and matcha can be used in cuisine, look no further than Tokyo’s tea-focused restaurants and cafes.
The theme here is “eating tea,” and the restaurant, which offers lunch, dinner, cafe and to-go menus, provides numerous ways to do just that. In addition to desserts like green tea parfait and matcha amazake affogato, you’ll also find tea-flavored French fries, tea-flavored sausages, horse mackerel with matcha, hojicha-roasted pork fillet and other creative combinations. Drinks include matcha wine, matcha beer—non-alcoholic and alcoholic—and green tea plum wine.
Opened in 2019 in Nihonbashi, Ippuku & Matcha serves matcha in a new style, using single origin Uji matcha to highlight differences in taste and aroma between cultivars. Enjoy a laid-back, private matcha experience in the cafe’s tearoom or grab drinks and desserts to-go, like matcha latte, matcha beer, matcha or hojicha (roasted green tea) terrine, matcha pudding tarts and matcha parfaits.
“Third-wave matcha” is the theme at Nihonbashi’s Atelier Matcha, opened in August 2021 and operated by a long-established tea wholesaler. The delectable lineup of premium farm-to-table Uji matcha drinks and sweets, served in a casual environment, includes matcha warabi-mochi shiruko (matcha with bracken-starch dumplings and sweet red-bean soup), matcha shots, Gion boloniya an butter toast, matcha affogato and unexpected creations such as matcha gorgonzola.
