Dive into a bowl of this Japanese specialty across the capital

Originally from China but with a firmly-rooted Japanese style today, ramen is the perfect any-time-of-day meal. With a variety of soup bases, including fish, chicken, and pork, and regional variations all accessible in Tokyo, tuck into a bowl—or three, as you make your way through the city. Here are some top ramen spots to get you started on your journey.

Kujira Shokudo—soy sauce ramen

Homemade noodles are the star of the show here. They're paired with a light, flavorful broth, made with ingredients from both land and sea. You'll want to slurp up every last drop! Kujira Shokudo is inside the Nonowa shopping complex, which is connected to Higashi-Koganei Station.

Fuunji—chicken and seafood ramen and tsukemen

Come here for what many call the best tsukemen in Tokyo. Chilled noodles are served alongside a bowl of thick, creamy dipping soup. Their special blend of ingredients makes for a wonderful mouthfeel and deep umami taste. Don't be intimidated by the large lines that often occur here; it moves quickly any time of day. It's less than 10 minutes from Shinjuku Station.

Mensho Tokyo—lamb based ramen and tsukemen

The brain-child of a true food scientist, you can enjoy the results of his experiments here. The lamb based soup offers a different take on the traditional ramen experience, and the wide variety of condiments lets you really customize the flavor of the bowl. Check it out just a 3 minutes from Korakuen Station.

Ichiran—tonkotsu ramen

Ichiran's natural pork-bone (tonkotsu) soup is skimmed to perfection, drawing out the ultimate flavor of the pork. Their noodles, made from a unique blend of quality flours, are made to synergize with the soup. Try adding the original spicy red sauce, a chili powder-based blend of 30 different ingredients, to bring out a richer taste. Ichiran branches can be found across Tokyo, including Shibuya, Asakusa, Roppongi, and Shinjuku.

Matador—beef ramen

For a rare treat, head to Matador and try the beef-bone broth ramen.Notoriously difficult to perfect, Matador does ramen well and offers up a delicious bowl of noodles topped with slices of roast beef. Matador is located a few steps away from Kita-Senju Station.It also has a sister shop that serves miso ramen and tsukemen.
